This recipe book sets out to present the reader with ideas for frozen hake, in all its varieties, as caught by our fleet: Merluccius hubbsi and Merluccius australis. Hake is a fish with numerous virtues and gastronomic versatility when prepared following the traditional culinary habits of Spanish cuisine. Not forgetting various traditional preparations from other cuisines such as the Italian, Greek, Portuguese or the Japanese, seeking to add their own particular flavour and qualities.
